Click http://www.onlinedocumentconversion.com register there, upload and convert your image, now you can edit your pdf accordingly and there is no need to download any software. This place seems pretty good for me and affordable at few cents per page after you run out of your free credits. Considering 24×7 online availability is pretty convenient also.

I was not sure you could! (Because text is words ... ) But surely if you just paste them to a Word file page or something then save as .doc, then that does it? Saves as a 'text' file that is.
